Zaytoen was called to the Bar in Cape Town in 2011 and practises in most areas of the law, including Competition, Construction, Constitutional, Maritime, Labour and Medical Malpractice Law. She has appeared in the Constitutional Court, the Competition Appeal Court, the Labour Appeal Court, most divisions of the High Court, including Full Bench panels in the Western Cape and Eastern Cape, as well as at the Competition Tribunal and in private arbitration.

Notable recent decisions in Zaytoen's matters include Mogale and Others v Speaker of the National Assembly and Others 2023 (9) BCLR 1099 (CC) and Member of the Executive Council for Finance, Economic Development, Environmental Affairs and Tourism (Eastern Cape) and Others v Legal Practice Council and Others [2022] 3 All SA 730 [ECG]. Zaytoen has also acted as a judge in the Gauteng Division, Johannesburg; sat as a referee in admiralty funds; and presided over disciplinary hearings. Her calm, focused and self-assured demeanor, as well as her inherent pursuit of excellence, has led to a successful and well-developed law practice.
